Basics

What is Greek yogurt?

Yogurt that has had part of its whey drained off after fermentation, making it thicker, higher in protein and lower in lactose. In Greece it is called straggisto (strained) and must contain at least 5.6% protein by law. Full guide.

Is Greek yogurt the same as strained yogurt?

Yes. "Greek" describes the straining method; "strained" is the technical word. Outside Greece, some "Greek" products are thickened rather than strained. How to tell.

What is Greek yogurt made of?

Milk (cow's, sheep's or goat's), sometimes cream to set the fat level, and two live cultures: Streptococcus thermophilus and Lactobacillus bulgaricus. Nothing else in authentic product. How it is made.

Why is Greek yogurt so thick?

Because about two-thirds of the milk's water leaves as whey during straining, concentrating the protein gel.

Why is it more expensive?

It takes roughly three kilograms of milk to make one kilogram of strained yogurt.

Does Greek yogurt have probiotics?

It has live cultures by definition. Their proven benefit is helping digest lactose; wider "probiotic" effects depend on added strains. Probiotics guide.

Is Greek yogurt lactose-free?
